What Are We Eating?

When is lunch?  What are we having for diner?  When you homeschool your kiddos, your fridge doesn’t seem to contain enough food.  Seriously, the grocery was done on Wednesday and by Friday I feel like I need to go back to the store again.  The joy of teaching at home, right?  The kids have access to the pantry and the fridge and they will devour everything in sight.

Honestly, as much as I enjoy watching some cooking show, I am also very exhausted to come up with meals to feed the eating monster that lives in my house.  So I came up with the perfect solution to my problem: The everything tray!  I do try to have a bit of fruits and veggies, some kind of meat and spread, crackers or tortilla cut in triangle and voila!  Help yourselves kiddos!  Nibble all afternoon or have your lunch but this is it!  Don’t get me wrong, I will add some grill cheese on a cold day or a bowl of soup but I keep it simple.  As long as all the food groups are represented, I am good with it.

This little tray is a life saver for me.  It is cost effective because I buy what is on sale or in season.  It has a bit of everything for everyone and it is filled with healthy option for the kids to pick from without fighting with them about it.  If they want to try a piece of apple on a cracker with pepperoni on top with a slice of pickle, I don’t care!  They love to experiment that way and they are, if I can say this, a bit more daring in trying whatever is new on that tray.  No more argument, simple and fast meal, life is great!
